Banana Bread

I LOVE banana bread. I actually love any kind of bread but when it comes to sweet breads I am completely smitten. Sitting down with a slice of lemon loaf or zucchini bread with a cup of coffee is heaven on earth.

I won 3rd place at the Orange County Fair for this Banana Bread!

There are about 1.3 billion banana bread recipes that are floating around in cyber space, so I decided I wanted to add one more, just for good measure! Everyone has their own way of making banana bread. Some like it ultra-moist and banana-y, while others prefer the addition of nuts or chocolate chips to snazz it up a bit. I am in the middle… I have tried chocolate chips and I think it overpowers the flavor. And I have tried walnuts throughout and I don’t like how it breaks up the soft texture. So I decided to just dump them on top!

Take a look at my version of banana bread and let me know what you think! The base batter is great for switching it up so feel free to add nuts or chocochips if you please.

Ingredients:

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3/4 cup sugar
  • 4 ripe bananas
  • 6 tbsp unsalted butter, melted
  • 1 tsp vanilla
  • 1 egg
  • Optional (but strongly encouraged): walnuts and cane sugar

Steps!

1. Preheat oven to 350 degrees. We bought an oven thermometer because our oven is not properly calibrated. I would recommend buying one of these because the temperature of baking is really important and how are you supposed to know if it is actually at?

2. Butter and flour a loaf pan.

3. In a bowl whisk the flour, baking soda, baking powder, cinnamon and salt together. Set aside.

4. Mash those bananas – I just use a fork… You can use a potato masher or your hands if you want. You can’t go wrong.

5. In a separate bowl, mix the butter, sugar, egg, mashed bananas and vanilla together.

6. Fold the dry ingredients into the wet ingredients until JUST mixed.

7. Pour it into the loaf pan.

8. Chop up a handful of walnuts for the top!

9. Sprinkle the chopped walnuts on top.

10. Bake in the 350-degree oven for 45 minutes (there will be more bake time after this step).

11. At 45 minutes, pull it out and sprinkle on a generous amount of cane sugar. There is not an exact science here, I usually use around 2 tbsp if you need an idea. We are putting it back in to bake for another 20 minutes or until a toothpick inserted into the middle comes out clean.
